I discovered this recipe in a magazine ("All You") I receive, and it looked simple enough so I tried it last night for dinner. It was delicious, and loved by the family, so I decided to share it with you. I accompanied this meal with baked potatoes, fresh squash and onions and croissants.
Slow-Cooker BBQ Chicken
24 oz. (about 3 medium) chicken breast, deboned & skinless
3/4 c. bottled bbq sauce, of your choice
1/4 c. reduced fat Italian salad dressing
2 T. packed brown sugar
1 T. Worcestershire sauce
2 T. cornstarch
*2 T. low-sodium chicken
1. Place rinsed chicken breasts in slow cooker. In a medium sized bowl, combine bbq sauce, salad dressing,brown sugar and Worcestershire sauce. Pour over chicken and cook on high for 5 hours.
2. Remove chicken and shred with 2 forks. In a small bowl, mix chicken broth and cornstarch. Stir into sauce which is in your slow-cooker, cover and cook until sauce is hot and thicken (about 5 to 10 minutes). Return chicken to cooker, stir covering the meat with the sauce and continue cooking on low heat for 45 minutes. You may serve the on buns, over rice or noodles, but my family enjoyed the chicken straight from the cooker.
Nutrition Facts: 116 calories, 3 g. fat (1g. saturated), 47 mg. chol., 0 g. fiber, 17 g. protein, 15 g. carb., 463 mg. sodium
*I used chicken broth in the packets, it saves wasting an entire can of chicken broth.
This recipe does not call for seasonings for the chicken , but I suggest adding salt, pepper and garlic powder or any other you may prefer to taste during the cooking process, if you desire.
You will have plenty of left-overs if you are feeding this meal to a family of four--tomorrow I will give you my recipe for BBQ Chicken Quesadillas, in which I am using my left over chicken from this meal!
